The Best Chicken Salad

This makes a great lunch! Serve over greens for a light lunch or on your favorite bread for a more filling meal.

I love this chicken salad on Healthy Loaf Bread from Wheat MT, 2 slices will give you an extra 10g of protein and 10g of fiber.

Makes 2 Servings

4 oz chicken, cooked, shredded, or chopped (about 1 small chicken breast or 1/2 of a large chicken breast)

3 celery stalks, diced

1 apple, diced

¼ cup raisins or chopped dates

¼ cup walnuts or pecans, chopped

1 tbsp. mayonnaise

1 tbsp. 2% Greek Yogurt

1 tbsp. lemon juice

3 oz. mixed salad leaves

  1. Place the chicken, chopped celery and apple, raisins, and nuts in a bowl. Add in the mayonnaise, yogurt, and lemon juice, season with salt and pepper, and mix well.
  2. Divide the salad leaves between bowls and top with the filling. Serve with freshly ground black pepper.
