This makes a great lunch! Serve over greens for a light lunch or on your favorite bread for a more filling meal.
Makes 2 Servings
4 oz chicken, cooked, shredded, or chopped (about 1 small chicken breast or 1/2 of a large chicken breast)
3 celery stalks, diced
1 apple, diced
¼ cup raisins or chopped dates
¼ cup walnuts or pecans, chopped
1 tbsp. mayonnaise
1 tbsp. 2% Greek Yogurt
1 tbsp. lemon juice
3 oz. mixed salad leaves
- Place the chicken, chopped celery and apple, raisins, and nuts in a bowl. Add in the mayonnaise, yogurt, and lemon juice, season with salt and pepper, and mix well.
- Divide the salad leaves between bowls and top with the filling. Serve with freshly ground black pepper.
