High Protein Blueberry Pancakes

I can’t think of a better way to start your day than with a plate full of pancakes with a healthy twist, these will truly help you feel AMAZING because of the great balance of protein to carbs to fats. Blueberries are powerfully anti-inflammatory, full of fiber, and delicious. This recipe balances out their sweetness with a high-protein pancake batter.

If this recipe is not enough to fill you up for a busy day, I recommend topping with a hearty spoonful of almond butter.

The healthy fats in bananas burn easily so you’ll want to cook these over low-medium heat.

Makes 1 Serving

2 eggs

1 serving of vanilla whey powder

1 banana, mashed

almond milk, if needed

¼ cup fresh or frozen blueberries

½ tsp. coconut oil or avocado oil

  1. In a blender combine eggs, protein powder, and banana. If the pancake mixture seems too thick, add a splash of almond milk to thin it.
  2. Heat the coconut oil in a pan to low-medium. Pour in the pancake mixture, sprinkle blueberries on top and cook until little bubbles form (about 5 minutes).
  3. Make sure the pancake has set enough before you try flipping it, then flip over. Cook the pancake for another 2-3 minutes.  
  4. You can also make 3 small pancakes instead of 1 large.
  5. Serve with your favorite toppings.
